When I was in college I had the opportunity to travel to Greece and Turkey on a J-Term trip. It was magical! The food was fabulous, fresh and incredibly flavorful. One of my favorite adventures was wandering the meandering isles of the Istanbul Spice Bazaar and discovering Zataar. Zataar is the name for a blend of dried herbs mixed with roasted sesame seeds, sumac and other herbs. It is used in many ways including a condiment in Middle Eastern/Mediterranean countries.
This summer I have been serving Mediterranean Bowls for dinner. I use Zaatar as a marinade for grilled chicken and combine it with lemon to make a savory vinaigrette. My family also enjoys Zaatar when it is added to a Zucchini, Bell Pepper and Feta Salad. Zaatar kicks up the flavor a few notches. It is similar to Oregano but with a more smoky flavor.
