My kids love this salmon recipe. I love it because it is healthy, can be prepared and served in under 30 minutes, and the clean-up is super easy when you use parchment paper. Salmon is our "reset food". When we have enjoyed a weekend of indulgences I like to start the week with a "reset food": whole food that makes you feel clean inside and out and gives you an opportunity to start fresh.
- parchment paper
- 6 small salmon fillets
- pinch of salt and pepper
- drizzle extra virgin olive oil (EVOO)
- ½ teaspoon dried oregano
- ½ fresh lemon
- 1 tsp each of dried basil, parsley, dill
- ¼ teaspoon crushed red pepper
- Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
- Sprinkle salt and pepper on salmon fillets.
- Lightly brush EVOO on salmon fillets.
- Sprinkle on dried oregano.
- Cook the salmon for 22-30 minutes until the salmon is easy to flake with a fork.
- Squeeze lemon juice on fillets.
- Sprinkle on dried, basil, parsley, dill and crushed red pepper.
- Serve with your favorite carbohydrate and vegetable.
- We like to purchase our salmon from Whole Foods due to their sustainable seafood pledge.
- I use Reynolds Kitchens Cookie Baking Sheets, Pre-Cut Parchment Paper. It makes clean-up a breeze.
- I like to use a Zulay citrus squeezer. It helps me get the last drop out of every lemon.
